Just Enough for One

There’s something quietly radical about making a nourishing meal just for yourself. Not for a crowd. Not for leftovers you’ll forget in the fridge. Just for you— right now.

That’s exactly what I did this week.

It had been a long few days of work, life, parenting, and all the busyness in between. I was tired, tempted to order out, didn’t want just simple snacks, but I knew I had just enough in the kitchen to make something simple and good. I didn’t want to overthink it. I didn’t want to overcook it either.

So I made this:

Rotini with Zucchini & Artichoke (1-2 servings)

Ingredients

  • 1/2 cup protein rotini (dry)

  • 1 full zucchini, chopped

  • A few artichoke hearts, from a jar

  • A few spoonfuls of tomato marinara

  • A pinch of dried herbs (whatever you’ve got)

  • A light shred of parmesan to finish (optional)

Instructions:

  1. Sauté the zucchini in a pan until it softened, then tosse in chopped artichokes.

  2. Boil water and add the rotini. Cook until al dente.

  3. Stir in a bit of marinara to coat the zucchini & artichokes, letting it simmer for a few minutes.

  4. Drain the pasta and add it to the veggie medley that is simmering

  5. Top with a shred of parmesan and call it dinner!

That’s it. A warm bowl. A quiet table. A moment of care that didn’t require more than what I already had. I didn’t buy new groceries. I didn’t prep for the week. I just cooked once, with intention, and made it enough.

That’s part of what Rooted Feast means to me. Not just recipes —but reminders that food doesn’t have to be fancy or instagram-perfect. It just has to be real. And real food meets you where you are.
